  • Sunday dinner of baked chicken, potatoes, and frozen veggies prepared by Jill McTighe at her home in Willesden, London, United Kingdom.  (From the book What I Eat: Around the World in 80 Diets.) The caloric value of her day's worth of food on a "bingeing" day in the month of September was 12300 kcals. The calorie total is not a daily caloric average.  Jill is 31 years old; 5 feet, 5 inches tall;  and 230 pounds. Honest about her food addiction replacing a drug habit, Jill joked about being a chocoholic as she enthusiastically downed a piece of chocolate cake at the end of the photo session. Her weight has yo-yoed over the years and at the time of the picture she was near her heaviest; walking her children to school every day was the sole reason she didn't weigh more. When she and her husband Orlando arrived at the field, a ten-minute walk from their home, they said a quick prayer to Pacha Mamma (Mother Earth) before working the land.   • Zumbagua has a vegetable market big enough to attract a few tourists. The town even has a small hotel or two. Zumbagua is midway between the high Andes and the coastal lowlands; its market, supplied by both climatic zones, creates a kind of ecological collision, with purple mountain potatoes and bumpy red oca tubers vying for space with tropical pineapples and blocks of coarse brown sugar. Biosphere 2 Project undertaken by Space Biosphere Ventures, a private ecological research firm funded by Edward P. Bass of Texas.  ‘Biospherian’ Jayne Poynter harvesting potatoes inside Biosphere 2 in the intensive agriculture biome.  Biosphere 2 was a privately funded experiment, designed to investigate the way in which humans interact with a small self-sufficient ecological environment, and to look at possibilities for future planetary colonization. The $30 million Biosphere covers 2.5 acres near Tucson, Arizona, and was entirely self- contained. The eight ‘Biospherian’s’ shared their air- and water-tight world with 3,800 species of plant and animal life. The project had problems with oxygen levels and food supply, and has been criticized over its scientific validity. 1992

Each strip is devoted to a different crop, and dependent on the season: wheat, rice, chilies, or potatoes. The wheat harvest, now in full swing, is assigned to the women. They take two long, dowel-like sticks, pinch a fistful of wheat heads between them, and then pull up, snapping off the heads. For long-term storage, they cut the whole stalk, bind it into sheaves, and store the result in the attic, from where it is threshed little by little, as the family needs it. The family of subsistence farmers lives in a 3-story rammed-earth house in the hillside village of Shingkhey, Bhutan.   • Sangay Khandu uses bulls to plow the family's fields, readying them for rice planting which the women in the family will do. He moves gingerly around the notoriously bad-tempered beasts. The Namgay household farms land that they own and rented land as well to feed their large family. The land is scattered in terraced strips through the hillsides near their home, each plot devoted to one crop: wheat, rice, chilies, or potatoes. Shingkhey, Bhutan.   • Zumbagua has a vegetable market big enough to attract a few tourists. The town even has a small hotel or two. Zumbagua is midway between the high Andes and the coastal lowlands; its market, supplied by both climatic zones, creates a kind of ecological collision, with purple mountain potatoes and bumpy red oca tubers vying for space with tropical pineapples and blocks of coarse brown sugar.   • Kelvin Lester, a floor supervisor at a meat processing company with his typical day's worth of food at his kitchen table in Grand Meadow, Minnesota. The hands on the right belong to Kiara, his four-year-old adopted daughter. Several times a week, hamburger patties that he purchases with an employee discount wind up on his dinner table, and then go into his lunch box, along with his wife's homemade potato salad. With more than 20 years of experience grinding beef at the Rochester Meat Company, Kelvin says he always grills hamburgers?no matter who has ground them?until they are well-done, because any contamination is most easily rendered harmless by thorough cooking, meaning cooking them to an internal temperature of at least 160 degrees Fahrenheit.
