  • On Green Island, a former prison island off the coast of SE Taiwan where political prisoners were incarcerated and re-educated during the unnervingly recent White Terror. There's actually still a high-security prison on the island, but it only holds 200 inmates (actual felons, not polital prisoners), as opposed to the couple thousand of earlier decades..Now it's mostly a tourist destination. We visited in the off season in March, thereby avoiding the 5,000-10,000 tourists that inundate the little place daily, though, being the off season, we had to contend instead with intermittent cold rain and high winds.

  • Maddox Dairy in Riverdale, California. Dairy Cows eating surplus oranges, ground up for cattle feed. The Maddox family owns and operates three different locations: Maddox Dairy, RuAnn Dairy and Golden Genes. Maddox Dairy is currently home to 3500 milking cows, calves, heifers and bulls. The dairy is a "birth to milking operation", with four, double-12, pregnant herringbone-milking parlors, free stall barns, calf raising barn and calving facilities. The dairy does their own embryo transfer work and markets their genetics worldwide. The Maddox Dairy was honored in 2001 with the Distinguished Dairy Cattle Breeder award for being a "Visionary Holstein Breeder", having bred more than 330 Gold Medal Dams, 502 Excellent cows, and their advancements in gene research for the Dairy industry. .In Visalia, California, surplus whole naval oranges are fed to dairy cattle. Other surplus oranges are chopped up and dried in the sun for cattle feed by Sungro Co. near Bakersfield, California.

Each dish contains seedlings cultured from a single cell, grown on agarose medium. Flavr Savr tomatoes have a gene that allows the fruit to ripen on the vine without softening; so they are tastier, don't need ripening with ethylene gas, and are not damaged during shipping. Tomato softening occurs due to the enzyme polygalacturonase. Flavr Savr tomatoes contain an anti-sense gene that blocks the enzyme. The harvest of mopane worms (dried, they have three times the amount of protein as beef) is a major economic event in Botswana. Whole families move into the countryside and set up camp in order to collect the worms. While mopane worms are eaten in Botswana, they are a coveted form of protein in South Africa as well and have been largely over-harvested there. (page 126)

Cryonics involves the freezing of whole human bodies, organs or pet cats & dogs, to await a future thaw & a potential second opportunity to live. A recently dead body would be frozen in stages, firstly down to -110 degrees Fahrenheit (using dry ice) and then down to -320 F (in liquid nitrogen). During this process, blood is replaced with a substitute mixed with glycerol, to prevent formation of ice crystals.   • Women harvest wheat in terraced strips through the hillsides near their home in the village of Shingkhey, Bhutan. Each strip is devoted to a different crop, and dependent on the season: wheat, rice, chilies, or potatoes. The wheat harvest, now in full swing, is assigned to the women. They take two long, dowel-like sticks, pinch a fistful of wheat heads between them, and then pull up, snapping off the heads. For long-term storage, they cut the whole stalk, bind it into sheaves, and store the result in the attic, from where it is threshed little by little, as the family needs it. The family of subsistence farmers lives in a 3-story rammed-earth house in the hillside village of Shingkhey, Bhutan. (Mariel Booth is featured in the book What I Eat: Around the World in 80 Diets.) The caloric value of her day's worth of food on a day in the month of October was 2400 kcals.   • Genetically engineered tomato plants. Geneticist Dr Virginia Ursin examines cultures of Flavr Savr tomato plants; the first genetically engineered whole food. Each dish contains seedlings cultured from a single cell, grown on agarose medium. Flavr Savr tomatoes have a gene that allows the fruit to ripen on the vine without softening; so they are tastier, don't need ripening with ethylene gas, and are not damaged during shipping. Tomato softening occurs due to the enzyme polygalacturonase. Flavr Savr tomatoes contain an anti-sense gene that blocks the enzyme. This tomato entered American supermarkets in 1994 but was withdrawn from the marketplace by Monsanto (which bought Calgene in 1997). Research at Calgene, California, USA. MODEL RELEASED.[1995]

  • Beijingers and travelers alike flock to the specialty restaurants, like Beijing Qianmen Quanjude Roast Duck Restaurant 32, Qianmen Street, for their very own Peking duck dinner. These succulent ducks will be served whole and cut tableside after the flurry of activity on the part of several cooks and assistants to prepare them in large roasting ovens. (Supporting image from the project Hungry Planet: What the World Eats) Although meat in the United States and Europe mainly comes from factory farms and is sold in shrink-wrapped packages, most animal products elsewhere (as these photographs demonstrate) come from small-scale producers and are sold by butchers.
