Rice farmer Nguyen Van Theo, age 51, of rural Tho Quang village, outside Hanoi, is a rice farmer with three children who lived hand-to-mouth until wife Vie Thi Phat, 53, moved to Hanoi with her sisters to sell vegetables on a street corner to support their families. Through the years she has managed to come home to the village only once every two months. (Theo Nguyen Van is featured in the book What I Eat: Around the World in 80 Diets.) MODEL RELEASED.

  • Wrestlers of the Professional Sumo Team (Musahigawa Beya): the members of Miyabiyama's Sumo Team cook and eat together while practicing for a tournament in Nagoya. The younger ones do most of the work. Sumos cook and eat chanko nabe, a stew pot of vegetable and meat or fish, at nearly every meal. It  is eaten with copious amounts of rice and numerous side dishes. Miyabiyama eats now to maintain his weight rather than to gain it, unlike the younger less gargantuan wrestlers in his stable who are eating a lot to pack on weight.

  • Bob Sorensen, an assistant golf course superintendent of The Golf Club at Redlands Mesa in Grand Junction, Colorado picks vegetables in his backyard.  (Bob Sorensen is featured in the book What I Eat: Around the World in 80 Diets.) He played football at Mesa State College in Grand Junction and graduated with a degree in criminal justice. Just before he took a desk job in his chosen profession he decided that he didn't want a desk job and found one that requires his constant attendance of the great outdoors, at a golf course at the foot of the majestic Colorado National Monument.  He earned a second degree in turf management, supervises a small crew of greenskeepers, and coaches high school football at Palisade High School.

The caloric value of his day's worth of food on a day in the month of September was 3,600 kcals. He is 25 years of age; 5 feet,  11 inches tall and 175 pounds. Switching career paths from criminal justice to turf maintenance enabled Bob to escape a desk job and work outdoors in a picturesque Western landscape. Some of his work is physical, but technology makes his irrigation chores easier. From one of many rock outcrops overlooking the lush fairways and greens in the dry, high desert valley, he can control a matrix of sprinklers with a single radio controller. MODEL RELEASED.

Joel (center) and Teresa (at his left) are joined by Joel's mother, Lucille, who lives on the farm, and farm apprentices Andy Wendt and Ben Beichler. Supper tonight is Teresa's honey-baked Polyface Farms chicken, which ?can't be served without her homemade applesauce,? says Joel. In addition, there are buttered potatoes, garden-fresh green beans with cured bacon, buttered beets, and sliced fresh garden vegetables. But Joel's favorite meal of the day? Breakfast! ?Aw man, pancakes, eggs, and sausage or bacon!?

The caloric value of her day's worth of food for a typical day in December was 2000 kcals. She is 38; 5' 2" and 130 pounds. This mother of four was able to earn enough to build several rental rooms next to her home in her village of Bari Majlish, an hour outside Dhaka. She and her tenants share a companionable outdoor cooking space and all largely cook traditional Bangladeshi foods such as dahl, ruti (also spelled roti), and vegetable curries. She and her family don't drink the milk that helps provide their income.

Bruno Comby, author of "Delicious Insects" (in French) lives and works in the Orkos Institute in the 17th century Chateau Montrame. His institute serves a raw diet he calls "instinctology" and describes as the Paleolithic nutritional practice by early human hunter-gatherer ancestors. Comby grows insects in cages for food. The kitchen and adjoining rooms are often smoky because the cookstove/fireplace is inside the house and doesn't vent to the outside.
