The caloric value of his meals this working weekday was 5,400 kcals. At the time of the photograph Tolby was 54 years of age; 6 feet, 2 inches tall; and weighed 260 pounds. His meals on the road haven't changed much over the years?truck stop and fast-food fare, heavy on the grease?despite warnings from his doctor. He has more reason than most to watch his diet, as he's suffered two heart attacks?both in the cab of his truck. The trucker travels with his best friend and constant companion, a five-year-old shar pei dog, named Imperial Fancy Pants, who gets his own McDonald's burger and splits the fries with Conrad. They specifically chose not to cover daily caloric averages, as they wanted to include some extreme examples of eating, like one woman's diet on a bingeing day or the small number of calories a herder in Kenya ate during extreme drought. The texts in the book provide the context for the photographs, detailing each person's diet, culture, and circumstance at the moment they were photographed: a snapshot in time. Over the years, he's learned a few dozen crafts, which eventually enabled him to restore a vast number of objects, build his own house, and be his own boss. His travel adventures have included crossing the Karakum Desert in Turkmenistan, where he spent time with a blind hermit and dined with a Mongol woman who hunted bears and treated him to groundhog soup. Rainwater from the tile roof of the main house fills a cement cistern, providing water for drinking and cooking. Theo enjoys the relative tranquility of village life, compared to his wife's busy routine of selling fresh produce on the sidewalks of Hanoi. Floods ruined his rice crop a few months ago, so after last year's store of rice is eaten, the family will rely on his wife's income to buy this staple grain until he harvests the next crop. Sam works the lobster boat by himself, saving on labor, but in the summertime his son Scout comes along. ?He's a blast,? says Sam. ?I take him and some of his friends out; they're all just leaning over the rail in their life preservers looking to see what's in the trap when it comes up. They're pretty good at saying, 'He's got a keeper.'? Sam's state license restricts his traps to the bay, where he averages only one lobster for every two traps. After paying for fuel and bait, there's not much profit. He supplements his income with fish auction commissions, and his family's diet with venison culled from the island's deer population.
