Markus Dirr, a master butcher, visits his neighbor, Hannes Ekström, a dairy farmer in Endingen, near Freiburg im Breisgau, Germany, to discuss which veal calf will next go into his sausages. The Dirrs know the farmers who supply their animals, and in fact hand choose the animals and watch them grow.Germans are among the biggest meat eaters in Europe, but eat slightly less meat than in decades past.
